    Batch Freezer Sizing: How to Match Machine Capacity to Daily Sales

    Choose a batch freezer by peak demand and cycle time, not by total daily sales alone. A machine that can produce 20 liters over a full day may still fail at 8 p.m. if it can only finish one 5-liter batch every 20 minutes and the shop needs three flavors at once.

    For most small shops, start with this rule: calculate the number of scoops needed during the busiest hour, divide it by the number of batches the machine can finish in that hour, then add 15% for mix expansion and serving loss. The result tells you the minimum useful batch size. Then check whether you need one bowl or two.

    Step 1: Measure demand in scoops, not liters

    Start with your point-of-sale data or a realistic sample day.

    1. Count total scoops sold.
    2. Identify the busiest hour.
    3. Count how many flavors were sold during that hour.
    4. Check how long a sold-out flavor stayed unavailable.
    5. Note the largest event, weekend, or holiday spike.

    If you do not have sales history, run a simple test. Count every scoop for three representative days and record the busiest 60-minute period. For a new shop, ask nearby businesses about weekend traffic and use a conservative estimate rather than the best-case number.

    Step 2: Convert scoops into liters

    A typical scoop is about 70-100 g. Use the size you actually plan to serve.

    The formula is:

    Batch size in liters = scoops per batch x scoop size in grams x 1.15 / 1,000

    The 15% allowance covers overrun, mix left in the machine, and normal serving loss. If your mix expands more, increase this allowance. If you sell by weight and have very tight controls, you can reduce it slightly.

    • Extraction: 3-8 minutes.
    • Cleaning or flavor change: 5-20 minutes.

    Cycle time changes with mix temperature, sugar content, fat level, initial mix temperature, room temperature, and the machine’s refrigeration capacity. A machine rated for a large batch may freeze slowly if the mix enters too warm or the room is hot.

    When a supplier says "20 liters per hour," ask whether that figure includes loading, extraction, cleaning, and recovery. Real production capacity is usually lower than the brochure’s ideal test result.

    One bowl can work for a simple menu, but two independent bowls solve several practical problems:

    • Dairy and vegan flavors remain separate.
    • Staff can produce a new flavor while another batch is being extracted.
    • A cleaning cycle on one side does not stop all production.

    8-12 L dual-circuit machine

    This is the practical middle ground for many independent shops. Two circuits provide flexibility, and the larger batch size reduces the number of production cycles. The exact output still depends on compressor power, mix temperature, and recovery time.

    20-30 L production machine

    A larger machine makes sense when wholesale accounts, events, or multiple retail locations create steady demand. It requires more power, more storage, more cleaning time, and a trained operator. Buying this class without the supporting workflow can create large batches of the wrong flavor and unnecessary waste.

    A realistic daily production plan

    Imagine a shop forecasts 300 scoops per day with a 90-scoop peak hour.

    • Average scoop: 80 g.
    • Daily production before waste: about 24 liters.
    • With 12% waste and sampling allowance: about 27 liters.
    • Peak hour needs 90 scoops, or roughly 8.3 liters at 80 g plus allowance.

    If the machine completes three cycles per hour, a 4-liter batch is the minimum. But if the shop sells four flavors during the rush, a dual 6-8 L machine gives a much safer margin. The shop can produce two flavors at once and avoid a single machine becoming the bottleneck.

    Using average sales as the target

    Average demand hides Saturday, holidays, and event traffic. Size for a realistic peak, then use production planning to avoid overbuying.

    Ignoring mix temperature

    Buying too many bowls

    More bowls increase cleaning, maintenance, and operator decisions. If the menu is simple, a larger single-bowl machine may be more useful than a small dual-bowl machine.

    Forgetting staffing
